Jackfruit Payasam

 

Jackfruit payasam is one of the most delicious and flavourful payasam you can ever have! 


What you need:

  • 2 cups jackfruit pods (remove seeds)
  • 1 cup jaggery
  • 3 cups scraped coconut 
  • 1 tbsp ghee
  • 1/2 cup semolina (roasted lightly)
  • 1 pinch salt 

Method:

  • Extract thick and thin coconut milk from the coconut. 
  • Clean the jackfruit pods and chop into small pieces. Heat 1 tbsp ghee in a pan and add the chopped jackfruit and fry on medium heat till a nice aroma comes out. Add the third extracted coconut milk, salt and jaggery. Keep stirring in between. Add second extract milk and roasted semolina. Stir well. Finally add the thick extract of coconut milk. 
  • Boil for 1-2 minutes. Serve hot.

Macaroons

 



We need

 

1 egg white

75 gm cashew nuts cut into small pieces

175 gm finely powdered sugar

1/2 tsp cardamom powder

 


Let's start


Preheat the oven at 120 C

Take a big glass or steel bowl and carefully separate the egg white from yellow.

Begin whipping egg white  slowly till it becomes  foamy and frothy. Increase the speed till the egg white becomes stiff. (Test: when the whisk is lifted the peaks should not drop).

 

Add sugar spoon by spoon into the stiff egg white. Keep whisking/whipping. [Takes a bit of time. Be patient].

 

Fold in the cashew nut pieces delicately little by little. Don’t mix vigorously. Finally add cardamom powder. Fold it gently.

 

Line parchment paper on a baking tray and drop spoonfuls of batter on leaving sufficient space in between. (10-11 macaroons). Place the baking tray in preheated oven and bake

 

for 20-30 minutes or till the macroons turn light brown.

Let them cool completely and enjoy with hot cup of coffe.

Note: Any yolk (or yellow part) or oil if mixes up with white will keep the white from getting stiff. Hence, wash the whipper/whisk and bowl with hot water before you start the recipe. Add the sugar only after egg white has beaten to a foamy stiff stage.

Can also bake the macaroons in microwave in convention mode. It will take around 15 minutes. Please refer users guide of microwave for correct timing and heating.

TOASTY CUSTARD PUDDING




You need

500 ml milk
1/2 cup sugar (increase or decrease as per your taste)
2.5 tbsps custard powder (smoothly mixed with little milk from above)
4 slices of bread (sides trimmed and cut into quarters)
1 tbsp ghee/oil or more to brown the bread slices
Cut dry fruits of your choice
Serving dish 2-3 inches deep



·     Heat a pan, spread ghee/oil and fry the bread pieces in ghee till brown flipping sides.
·     While frying bread, take half a cup of milk and mix the custard powder to a smooth paste.
·     In another pan boil the remaining milk add sugar and stir well till sugar dissolves.
·     Drop the fried bread slices into milk. Let the bread will soak in to milk for 2-3 minutes.
·     Slowly transfer the soaked bread pieces to the serving dish.
·     Now boil the remaining milk. When it boils add the custard paste and cook in sim for 3 minutes.
·     The milk starts thickening. After 3 minutes put off the heat. Wait for a minute.
·     Pour the custard over the bread slices. Garnish with dry fruits. Leave it to Cool.
·     When cool, refrigerate it  and serve.

Vanilla Custard


Vanilla Custard




You need:


500 ml milk 
2 table spoons vanilla custard powder
2- 3 table spoons sugar (adjust to taste)
Dry fruits of your choice

Mold: Smear little ghee or butter inside the mold and keep it ready. If ready made mould is not available as shown in the picture, use a nice steel or ceramic bowl .

Method:


Take half a cup of milk and dissolve 2 tbsp custard to make a smooth paste. keep aside.
Take rest of the milk in a thick bottomed vessel and bring it to boil. Add sugar. Check the taste. 
Bring the heat to minimum and slowly add custard paste and keep stirring. The milk thickens.
After 3 minute, put off the heat. Leave for a minute and slowly pour the custard into prepared mold.
Sprinkle dry fruits of your choice. Let it cool and set in the mold. Refrigerate it if you like.

To unmold: Cover the mold with well filling plate slightly bigger than mold. Place it upside down (lid dowanwards). Slowly lift the mold. Cut into slices and serve.

Alternately, you can place the dry fruits in the mold before pouring the custard.
